Spicy Plum Salsa

This is my friend Mel’s favorite salsa (a.k.a. Lady Beast Salsa.)


8 Ripe Plums, pits removed and chopped
1 Orange, sectioned and chopped
1 Lime, sectioned and chopped
1/4 Cup Red Bell Pepper, finely chopped
3 tbsp Red Onion, finely chopped
1 Jalapeño Pepper, finely chopped (with seeds for more heat)
1-2 tbsp Fresh Mint, finely chopped
1/8 tsp Fine Grain Sea Salt
1/4 tsp Crushed Red Pepper Flakes (or to taste)

Combine all of the ingredients in a medium bowl and mix together. Adjust the seasoning and heat as needed. Allow the salsa to sit covered in the fridge for about 15 minutes prior to serving.
