Oven Baked Lemon-Dill Potatoes

3 lbs organic red skin potatoes, washed and cut in half, then sliced 1/4-inch thick
1/4 cup fresh dill, chopped
4 cloves garlic, minced
1/4 cup safflower oil
Juice of one lemon
Sea salt and pepper to taste

Preheat the oven to 400 degrees F.

Place sliced potatoes in a large bowl. Add safflower oil, dill, lemon juice, salt and pepper. Toss to combine well. Distribute evenly onto 2 baking sheets.

Bake for 40 minutes, or until the potatoes become crispy and golden brown. Toss the potatoes about half way through to make sure they get cooked evenly.
