Lemon-Horseradish Cream

Garlic Horseradish Dip (vegan)

I loves me some horseradish!!! I think I acquired a taste for it from my dad. This sauce pairs well with mashed potatoes, roasted veggies, grilled seitan, etc, etc, etc. Makes for a tasty dip too. I prefer to use fresh horseradish root, but prepared horseradish will do just fine.


1 cup tofu sour cream (I like tofutti brand or even homemade)
1/4 cup micro-grated fresh horseradish root *
1 1/2 tbsp fresh lemon juice
1/4 tsp lemon zest (micro-grated is best) *
Sea salt and pepper to taste

* Tip: If you don’t have a micro-grater you can always just use a regular grater or zester, and finely chop the grated horseradish root/zest.

Combine all of the ingredients in a bowl and whisk to combine. Store in the fridge for an hour or two before serving.
